Yes, breakfast is a very important meal of the day and it is unwise to skip it. And why would you even want to skip it?

Method –

Break open the eggs in a bowl and whisk them gently.
Add the mushrooms and the grated cheese to the whipped eggs.
Heat a pan and grease it with oil/cooking spray.
Pour the egg mixture into the pan and scramble it until the eggs start to feel slightly firm.
The eggs are ready to be served with buttered/unbuttered toast.

Tip – If you want to make this more interesting and flavorful (and if time permits), throw in some chopped tomatoes and spinach leaves.

2. Grilled Peanut Butter and Banana Sandwich


Ingredients (Serves One)

  • 2 slices wholewheat bread
  • 2 tablespoon peanut butter
  • 1 banana (sliced)
  • Cooking spray

Method –

Spread 1 tablespoon peanut butter on each of the bread slices.
Place the banana on the buttered side of one of the slices and top it with the other one to make a simple sandwich.
Heat a griddle and coat with cooking spray.
Place the sandwich on the griddle and press the slices firmly together using a spatula.
Fry the sandwich until both sides turn golden brown (about 2 minutes per side on a medium flame).
Serve hot.

3. Yummy Breakfast Sundae


Ingredients (Serves Two)

  • 2 cups yogurt (plain/vanilla/Greek)
  • ¼ cup dried apricot (slivered)
  • ¼ cup dried figs (sliced)
  • ¼ cup pistachios (chopped)
  • 2 tablespoon honey

Method –

Pour the dried apricots, figs, pistachios, and the honey into a bowl and mix well. Divide into two equal portions.
Take out two bowls and pour a cup of yogurt into each of them.
Top each yogurt scoop with the dried fruit and honey mixture.
Give it a gentle swirl and serve immediately.

Tip – For an extra punch and a dash of color, add chopped strawberries, blueberries, pomegranate, mangoes, and kiwis to the dried fruit mixture.

4. Quick and Healthy Cheese Omelette


Ingredients (Serves One)

  • 2 eggs
  • ½ cup onion (chopped)
  • ½ cup tomato (chopped)
  • Cilantro (finely chopped)
  • A slice of cheese
  • Salt and pepper to taste
  • 1 teaspoon oil

Method –

Break open the eggs in a bowl.
Add all the ingredients — chopped onion, tomatoes, and cilantro, as well as salt and pepper — and whisk gently.
Heat the oil in a pan.
Pour the egg mixture into the pan and spread it thin.
Place the slice of cheese on one side of the omelette and fold the other half of the omelette onto it.
Flip the omelette to cook it on both sides.
Serve with buttered/unbuttered toast.

Tip – If you have more time at hand and wish to make the omelette more nutritious, you can add other fresh vegetables like sliced mushrooms, bell pepper, cabbage, and bacon to the egg mixture as well.

5. Tangy Breakfast Smoothie


Ingredients (Serves Two)

  • 3 passion fruits
  • 1 banana (chopped)
  • 1 mango (chopped)
  • 300 ml orange juice
  • Ice cubes (optional)

Method –

Scoop the pulp out of the passion fruit.
In a blender, throw in the pulp, the banana, the mango, and the orange juice.
Puree until smooth.
Serve immediately topped with ice.
